Vegan Banana, Oat and Date Muffins

Vegan Banana Oat Muffins

Ingredients
  

  • 2 cups porridge oats (organic if possible)
  • 3 ripe bananas
  • 3/4 cups chopped dates
  • 1/2 cup almond milk
  • 2 tsp apple cider vinegar
  • 1 tbsp baking powder
  • 2 tbsp almond butter

Instructions
 

  • Preheat your oven to 180 degrees celsius / 350 degrees fahrenheit.
  • Pour the porridge oats into a blender and blend for 10-20 seconds until the mixture has turned into a fine flour consistency. Transfer the oats to a mixing bowl.
  • Separately, blend the almond milk, almond butter, bananas, chopped dates, and apple cider vinegar into a blender. Blend until smooth.
  • Mix wet ingredients with the dry ingredients. Be careful not to overmix.
  • Evenly pour the mixture across a muffin tray – mixture should make up 9 muffins.
