Delicious Healthy Banana Oat and Date Loaf {Dairy and Egg-Free}
Ingredients
- 3 Bananas (Mashed)
- 75 mls Olive Oil
- 75 g Honey
- 150 g Oats (Blended)
- 75 g Plain Flour
- 2 tbsp Chopped Dates
- 1 tsp Baking Powder
- 1/2 tsp Bicarbonate of Soda
- tsp Cinnamon
Instructions
- Preheat your oven to 180°C / 360°F using the fan setting.
- Combine the mashed bananas, olive oil and honey into a bowl.
- Blend the oats into a fine mix, then combine with the flour, pumpkin seeds, dates, cinnamon, baking powder and bicarbonate of soda in a separate bowl.
- Gradually fold the wet mix into the dry mix, slowly combining for a few minutes.
- Pour combined mix into a greased loaf tin. Sprinkle top of mixture with additional oats.
- Bake in oven for 20 minutes. Cover with foil for another 20 minutes. Leave to rest for 30 minutes.
