Recipe Ingredients

This recipe contains a mixture of wet and dry ingredients:

  • Strawberries – either fresh or frozen
  • All-purpose flour
  • Plant based milk – for this recipe I have used almond milk
  • Olive oil
  • Baking powder
  • Bicarbonate of soda
  • Honey
  • Apple cider vinegar
  • Salt
  • Lemon juice
  • Vanilla essence

Recipe Instructions

  1. Pre-heat a conventional oven to 375 F / 190 C.
  2. Line a muffin baking tray with olive oil spray and muffin liners
  3. Mix the flour, baking powder and bicarbonate of soda and salt into a large mixing bowl.
  4. In a separate mixing bowl, combine the apple cider vinegar and almond milk.
  5. In another separate mixing bowl, combine and whisk the honey, olive oil, lemon juice and vanilla extract. Add in the apple cider vinegar and almond milk mixture and combine.
  6. Add the wet ingredients to the dry ingredients into the large mixing bowl. Be careful not to over-mix.
  7. Fold the strawberries into the combined mixture.
  8. Carefully add the muffin mixture into each muffin tin, ensuring each muffin tin is at most three-quarter full.
  9. Bake for 20-25 minutes. Remove from oven and leave to cool in dry kitchen top before removing from muffin tray.

  • 2.5 cups all-purpose flour
  • 1/4 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup honey
  • 1/4 cup olive oil
  • 1 tsp vanilla essence
  • 1 tsp lemon juice
  • 1 cup fresh or frozen strawberries
