Recipe Ingredients
This recipe contains a mixture of wet and dry ingredients:
- Strawberries – either fresh or frozen
- All-purpose flour
- Plant based milk – for this recipe I have used almond milk
- Olive oil
- Baking powder
- Bicarbonate of soda
- Honey
- Apple cider vinegar
- Salt
- Lemon juice
- Vanilla essence
Recipe Instructions
- Pre-heat a conventional oven to 375 F / 190 C.
- Line a muffin baking tray with olive oil spray and muffin liners
- Mix the flour, baking powder and bicarbonate of soda and salt into a large mixing bowl.
- In a separate mixing bowl, combine the apple cider vinegar and almond milk.
- In another separate mixing bowl, combine and whisk the honey, olive oil, lemon juice and vanilla extract. Add in the apple cider vinegar and almond milk mixture and combine.
- Add the wet ingredients to the dry ingredients into the large mixing bowl. Be careful not to over-mix.
- Fold the strawberries into the combined mixture.
- Carefully add the muffin mixture into each muffin tin, ensuring each muffin tin is at most three-quarter full.
- Bake for 20-25 minutes. Remove from oven and leave to cool in dry kitchen top before removing from muffin tray.
