Packed with bacon, eggs, mozarella and potatoes, this breakfast hash recipe is packed full of flavour and the perfect family staple for slow weekend mornings.
Ingredients
- 6 slices thick cut bacon
- 2 tbps olive oil
- 2 potatoes cut into 1/2 inch pieces
- 1 red pepper
- 1 tbsp Worcestershire sauce
- 1 tsp salt
- 1/4 tsp black pepper
- 1 cup shredded mozarella
- 1/4 cup spring onions
- 4 eggs
- 6 slices baton bread
Instructions
- Heat a large nonstick or cast-iron skillet over medium-high heat.
- Add the potato pieces and diced onion for five minutes.
- Add the sliced bacon and cook until golden brown, for 10 minutes.
- Stir in the crème fraîche, Worcestershire sauce, salt, and pepper. Reduce the heat to low and simmer until the crème fraîche has thickened, after about three minutes.
- Add in the mozarella and spring onions, remove from heat after two minutes.
